Instructions

Banana pudding is the layered dessert of the American South: vanilla custard, vanilla wafers and sliced bananas, often under a meringue baked golden. This recipe makes the custard from scratch, fills a 2-quart dish and serves 8. It takes about 1¾ hours, including 30 minutes to cool, and you can eat it warm or cold.

What banana pudding is

It is less a pudding than a layered dish, closer to a trifle. Daniel Vaughn, the barbecue editor of Texas Monthly, puts it simply. “Banana pudding requires just three basic elements: The pudding, fresh banana slices, and some sort of cookie, most popularly Nilla wafers,” he told CultureMap in September 2026.

It started up North

The first banana puddings were not Southern at all. The White House Cook Book of 1887, now on Project Gutenberg, layers sponge cake with sliced bananas in a glass dish. A soft custard flavored with wine goes over the top. Then “beat the whites of the eggs to a stiff froth and heap over the whole”.

A church cookbook from Akron, Ohio, printed nearly the same recipe the same year. These early versions copied the English trifle, writes the food historian Robert F. Moss. Banana desserts spread as the Central American banana trade boomed in the 1870s and 1880s.

Then came the wafers

Cooks swapped the sponge cake for ladyfingers, then for vanilla wafers in the 1920s, Moss writes. In the 1940s, Nabisco began printing a banana pudding recipe on its Vanilla Wafers box. The cookie was renamed Nilla in the 1960s.

In the South, bananas were easy to come by. “Bananas have sailed into our deep Southern ports for generations,” writes Sheri Castle for the Southern Foodways Alliance. Today they are cheap and everywhere, “even in a basket near the register at the corner quick mart”.

The barbecue dessert

The earliest banana pudding Moss found at a barbecue restaurant was in 1927, at Smitty’s Barbecue Lunch in Macon, Georgia. By the 1980s it was standard in North Carolina. In 1996, the writer Bob Garner called it “the most widely served dessert in North Carolina barbecue restaurants”.

Texas came later. Vaughn calls it “the number one dessert associated with the smoky cuisine, ahead of peach cobbler”, Texas Monthly reported in February 2026.

Warm or cold?

The South splits on this. In North Carolina, “it’ll come piping hot and covered in meringue, but in Texas it’s served straight from the fridge”, Vaughn wrote in 2015.

The Alabama chef Rob McDaniel serves it warm. “It’s like this warm hug,” he told Garden & Gun. “You don’t get that from cold banana pudding.” The Georgia cookbook author Rebecca Lang likes it “nice and cold”, she told Southern Living. This recipe works both ways.

Why banana pudding is back on menus

Banana is a comeback flavor

On October 7, 2026, the menu researchers Datassential published their trend predictions for 2027. Banana is one of five flavors “making a comeback”, with anchovy, mango, the old fashioned and deli salads, its release says. Its examples are “banana coffee and cocktails”. The release does not name banana pudding. The only pudding it names is sticky toffee pudding, now a “New Classic”.

Big chains are already there. They added 100 banana items from July 2025 to July 2026, more than in any full year before, Datassential told Axios in August. Banana was the fastest-growing drink flavor at restaurants, according to Circana’s data.

Banana pudding flavors everywhere

Many of those launches taste of banana pudding. In late August, Sonic brought back its Banana Pudding Shake, made with “vanilla wafer cookie crumbles”. It added a Banana Pudding Blast too, its owner Inspire Brands announced.

Magnolia Bakery in New York has built a business on its no-bake version. Its banana pudding drives “30-40% of total sales across its retail locations in the U.S.”, ABC7 New York reported in September 2026. The bakery says it sells five cups every minute, Snack Food & Wholesale Bakery reported in February. Those are the company’s own figures.

The festival, and the searches

The National Banana Pudding Festival ran on October 3 and 4, 2026, in Centerville, Tennessee, as it has every October since 2010. A baker from Georgia, Nancy Crosby, won the cook-off, NewsChannel 5 in Nashville reported.

We checked Google Trends on October 14, 2026. US searches for banana pudding from January to September 2026 ran about 14% above the same months of 2025. They peak every year in Thanksgiving week. Mississippi, Alabama and Tennessee search for it the most.

Bananas are not the story. They cost 65 cents a pound in US cities in August 2026, slightly less than a year before, the Bureau of Labor Statistics shows. For banana pudding itself, we found no 2026 sales or menu number: the data are about banana as a flavor.

What you need for banana pudding

We compared 35 published banana pudding recipes, 25 of them from Southern cooks or Southern outlets. They range from the Nilla box recipe to Edna Lewis and Scott Peacock, Southern Living, Garden & Gun and Atlanta’s Mary Mac’s Tea Room. Twenty-six make a cooked custard with eggs. This recipe sits on the medians of the 15 cooked-custard recipes sized for a 2-quart dish or an 8- to 9-inch square pan.

Milk and eggs

The median is 3 cups (720 ml) of milk and 4 egg yolks for a dish this size. Whole milk gives a rich custard without cream. A few cooks go much richer: Edna Lewis and Scott Peacock use 12 yolks with milk and cream.

Flour or cornstarch

Flour is in 15 recipes and cornstarch in 14. Flour is the classic choice: the Nilla box recipe and Daniel Vaughn both use it. It needs a full minute of bubbling to lose its raw taste. Cornstarch sets a little firmer and glossier. To use it, swap the flour for 3 tablespoons of cornstarch.

Bananas

Use 4 medium bananas, the median. Pick ones that are yellow with a few brown freckles: ripe enough to taste sweet, firm enough to slice. Very spotty bananas turn mushy in the custard.

Vanilla wafers

The median is 45 wafers for a dish this size. This recipe uses about 50, a little under two-thirds of an 11-oz (312 g) box. “Do buy the Nilla Wafers; they can’t be improved on,” Castle writes. Other cooks use pecan sandies, shortbread or toasted pound cake.

Meringue or whipped cream

Seventeen recipes top the pudding with meringue and 14 with whipped cream. Four use no topping at all. “Many southerners will tell you a true banana pudding has a meringue on top,” writes Christin Mahrlig of Spicy Southern Kitchen. The meringue recipes use a median of 4 egg whites, which conveniently uses up the whites from the custard.

How to make banana pudding custard that sets

Whisk it cold, or temper it

About half the cooked-custard recipes temper the yolks, adding hot milk slowly. The other half whisk everything together cold and heat it slowly, as this recipe does. With flour in the mix and constant whisking, the yolks thicken the custard without scrambling.

Cook it past the first bubbles

Cook the custard until it bubbles, then keep whisking for 1 minute. Cook’s Country, from America’s Test Kitchen, cooks its version until it “registers 180 degrees in several places”, so it sets once chilled. The FDA’s rule for dishes with eggs is 160°F (71°C).

Keep it hot for the meringue

Layer the pudding while the custard is still hot, and spread the meringue straight on top. Heat from below helps cook the meringue through, so it weeps less. If the pudding will be served cold with whipped cream instead, press plastic wrap onto the custard to stop a skin forming.

Bananas brown, and that’s fine

Cut bananas darken because of an enzyme called polyphenol oxidase, Scientific American explains. Eight of the recipes toss the slices in lemon juice. Buried under hot custard, they barely brown, so this recipe skips it.

Baking a meringue that is cooked through

Seal it to the edges

Spread the meringue from the edges inward, so it touches the dish all around. Sealed, it doesn’t shrink away from the sides or slide on the custard.

Low and slow

The baked meringues in our recipes go into ovens from 325°F to 425°F, for a median of about 13½ minutes. That browns the top, but a thick meringue may not heat through. The American Egg Board has a rule for a meringue of more than 3 egg whites. Bake it “at a lower temperature (about 325°F) for a longer time (25 to 30 minutes)”, so it reaches 160°F. Its guide is the basis for this recipe’s bake.

A kitchen torch or a broiler browns the outside only, and the inside may stay underdone. Two of the recipes finish that way.

Humid days

“Baked meringue can quickly turn soft and sticky on hot, humid days,” Castle warns. Make it on a dry day if you can, and dissolve the sugar fully as you beat it in.

Variations: chilled, no-bake and other cookies

Chilled with whipped cream

This is the barbecue-joint style, served cold. Skip the meringue. Press plastic wrap onto the custard and chill the pudding for at least 4 hours. Before serving, whip 1 cup (240 ml) of heavy cream with 2 tablespoons of powdered sugar, spread it on top and scatter crushed wafers over it.

Magnolia’s no-bake version

Magnolia Bakery’s recipe skips the custard. You beat sweetened condensed milk with ice water and instant vanilla pudding mix, let it set, then fold in whipped cream. It layers the same way and needs 4 to 6 hours in the fridge. It is sweeter and lighter, and it has no cooked eggs.

Other cookies and cakes

Rob McDaniel layers pecan sandies. Paula Deen uses shortbread cookies. Edna Lewis and Scott Peacock offer toasted angel food cake, closer to the 1887 recipe.

Serving and storing banana pudding

Warm or chilled

Serve it after 30 minutes for a warm pudding with a crisp meringue. For a cold one, chill it at least 2 hours, until the wafers soften like cake. Cook’s Country chills its whipped-cream version 8 hours for “perfectly tender, cake-like cookies”.

How long it keeps

Refrigerate the pudding within 2 hours of baking, the CDC’s limit for perishable food. Baked dishes with eggs keep 3 to 4 days in the fridge, says the government’s FoodSafety.gov chart.

It tastes best within a day. After that, the meringue weeps and the bananas soften. Don’t freeze it: the custard and bananas turn watery.

Calories and allergens

One serving, an eighth of the dish, has about 410 calories, 8 g of protein, 12 g of fat and 68 g of carbohydrate, most of it sugar. Our estimate adds up USDA values for whole milk, eggs, sugar, flour, butter, bananas and vanilla wafers.

Banana pudding contains milk, eggs and wheat. Nilla wafers also contain soy, their label shows. Each of the four is a major allergen under US law, the FDA notes.

Fixes for banana pudding that is runny, lumpy or weeping

  • The custard is runny: it didn’t cook long enough. It must bubble for a full minute. Next time, check that it reaches 160°F (71°C) or more.
  • The custard is lumpy: the heat was too high, or you stopped whisking. Push it through a sieve while it’s hot.
  • The meringue is weeping: it went onto cool custard, or the sugar didn’t dissolve. Spread it on hot custard and beat until it feels smooth.
  • The meringue shrank: it wasn’t sealed to the dish. Spread it to the edges all around.
  • Beads on the meringue: it baked too long or too hot. Stick to 325°F (165°C).
  • The wafers are crunchy: it needs more time. Chill it for a few hours.
  • It’s soupy the next day: the bananas were overripe. Choose firm, lightly freckled ones.

Substitutes for missing ingredients

  • Vanilla wafers: Marie biscuits, Rich Tea, petit beurre, shortbread or ladyfingers. Marie biscuits are sold in many countries.
  • Whole milk: 2% milk for a lighter custard, or half-and-half for a richer one.
  • Flour: 3 tablespoons of cornstarch.
  • Cream of tartar: 1 teaspoon of lemon juice in the meringue.
  • Vanilla extract: vanilla bean paste, in the same amount.
  • Oven-safe dish: any 2-quart baking dish. For the no-bake version, a glass bowl or trifle dish.

Frequently asked questions

Is banana pudding served warm or cold?

Both. In North Carolina it often comes warm with meringue, and in Texas cold from the fridge. This recipe works either way.

Should banana pudding have meringue or whipped cream?

Either. Of the 35 recipes we compared, 17 use meringue and 14 whipped cream.

Why is my banana pudding runny?

The custard didn’t cook long enough. Cook it until it bubbles, then 1 minute more.

How long does banana pudding last in the fridge?

Up to 3 to 4 days, but it is best within a day, before the meringue weeps.

How do I keep the bananas from turning brown?

Cover them completely with hot custard. You can also toss the slices in a little lemon juice.

Can I make banana pudding ahead?

Yes. Make the whipped-cream version up to a day ahead. Make the meringue version the day you serve it.

Can I freeze banana pudding?

No. The custard and bananas turn watery when they thaw.

What do you serve before banana pudding?

In the South, barbecue or a Sunday dinner such as classic pot roast.
